Ingredients
for Cajun Spice Rub:

T paprika
2 t cayenne pepper
1-1/2 t ground white pepper
1-1/2 t ground black pepper
1 T salt
2 t onion powder
2 t garlic powder
1 t thyme
1 t oregano

Ingredients
for Crème Fraise:
1
pint heavy cream, whipped
2 limes juiced
½ bunch cilantro, chopped
1/4 c mirin (or honey)

Dip fish in melted butter.
Combine Cajun Spice Rub ingredients. Gently rub on
both surfaces of buttered fillets.
Combine thickened cream with lime juice, cilantro
& mirin (or honey).
Heat pan and add vegetable oil.
Place coated fillets in pan and sear for approximately
3 minutes per side.
Slice cooked tuna in strips and serve with Crème
Fraise.
